WHAT IS COCONUT SUGAR?

Coconut sugar comes from the blossoms of the coconut tree. The coconut blossoms create a sweet nectar/sap that is turned into a syrup like substance. It is then boiled and dehydrated to become sweet, coconut sugar crystals.

Coconut sugar can also be called coconut palm sugar, and its’ a great substitute for regular sugar in most recipes.

WHAT DOES COCONUT SUGAR TASTE LIKE?

If you’re not a fan of coconut, don’t worry; coconut sugar does not taste anything like coconut. It has a light caramel flavor, and is more similar to brown sugar in taste.

 IS COCONUT SUGAR HEALTHY?

Coconut sugar has caught the attention of many of those who are health conscious because of its low fructose content and low glycemic index. It also contains traces of some minerals and antioxidants as compared to regular white sugar.

 Another factor that gives coconut sugar an edge over the other sweeteners is that it is not refined or chemically altered and contains no artificial ingredients or synthetic substances.

WHY TO CHECK THE GI OF FOOD?

Glycemic Index (GI) is the ranking of a food’s immediate effect on blood sugar levels and the amount of glucose released over a 2-3 hour period. The higher a food raises blood sugar, the higher the glycemic index. Foods ranked low on the GI scale release glucose into the body slowly and steadily without a sudden spike of glucose in the blood. Low glycemic foods rank 0-55, medium GI 56-69, and high glycemic foods rank 70-100 on the GI scale

Regular table sugar has a glycemic index (GI) of 65, while coconut sugar has a GI of 35. This is much closer to the GI of the sugar that’s naturally found in fruits, which is around 25.

We are happy to report that when Coconut Sugar – Neera Jaggey are digested they do not readily turn into glucose and are therefore, absorbed much more slowly by the body due to their very low levels of naturally occurring glucose and fructose.

An alternative to refined sugar:

Coconut sugar can replace regular table sugar in a 1:1 ratio, which means it’s easy to make the transition. It is similar to cane sugar with regard to consistency.
